The group's main goal is to produce indigenous coffee varieties and maintain a balance with the local ecosystem. Its owner, Douglas Urquia, has therefore planted mahogany, guava, cedar, citrus and banana trees on his farm, which give his coffees a new dimension in terms of flavor.\u003c\/span\u003e\u003c\/p\u003e\n\n\u003cp\u003e \u003cspan\u003eDouglas produces only 35 bags of coffee per year, making it a relatively rare coffee. Only ripe cherries are picked and further sorted at the processing station. They are then rinsed in fresh water, partially peeled and left to dry on cascading terraces. The pulp remaining on the beans after partial peeling creates a sticky honey-like mass on the beans.
